Hand-forged in Sakai by Satoshi Nakagawa and sharpened by Masaya Shimizu, this 270 mm Yanagiba combines traditional Japanese craftsmanship with the clean cutting performance expected from a professional sashimi knife.

The blade is forged from Shirogami (White) #2 carbon steel, known for its fine grain structure, excellent sharpenability, and ability to take a very keen edge. Paired with the traditional single-bevel geometry of a Yanagiba, it is well suited to smooth, precise slicing of sashimi and other delicate fish preparations.

The 270 mm blade offers a practical balance between reach and control, making it suitable for both professional kitchens and experienced home users.

As with Shimizu-san’s other work, the blade is intentionally left without a traditional maker’s name engraving. According to Shimizu-san, this reflects his concern that engraving can contribute to blade distortion over many years of use. The same philosophy is also seen in knives from his own brand, Hachimen Reiro (八面玲瓏).

Finished with a traditional Rosewood Octagonal handle, this knife presents a restrained, functional aesthetic that keeps the focus on the steel, geometry, and craftsmanship.
